Jaggery is an
uncentrifuged sugar made from jaggery by clarification and
concentration process. The making process starts with extracting
juice, screening juice by fine mesh, slow heating in open tank,
clarifying juice, and concentrating juice. This entire process
creates jaggery in solid form. The grading process is carried out
considering factors, like visual appearance, color, taste,
crystalinity and hardness. The technical factors used to decide on
the grade are sucrose%, moisture and reducing sugar. It can be
